What I Ate Wednesday: The Crazytown Edition

Welcome to Wednesday in Crazytown.

When Crazy comes to town he steals all my time. And energy.

The annual Cub Scout banquet and dinner is in exactly 48 hours from when I wrote this post. Still so much to do my head is spinning.

Not literally.

(But it would be pretty awesome if it was. I would totally post the video.)

It’s the last Wednesday in March. Our last official green celebration. Thanks to Jenn at Peas and Crayons for hosting the party. And for encouraging green fruit and veggie love. Green things are fun.

I did much better this week than I did last week. Last week was green-less!

Breakfast: 8 am

Hot water with half a lemon squeezed in.

A cup of plain Greek yogurt, 2 chopped kiwi fruits, a sprinkle of cinnamon and some homemade granola.

Ready to start The Day of Crazy.

Volunteer at school.

Cut programs and favor tags for banquet with industrial paper cutter.

Drive across town to pick up $3500 CD at doctor’s office. (Not really, but that is what the info on that CD cost to obtain!)

Oh look, water bottle matches outfit. Totally planned it.

Snack: 11:30 am

Scarf down apple and unpictured raw almonds in the car.

Stop at Michael’s. Again. For the 42nd time this week.

Not sure how this ended up in my bag:

So glad it did.

Go to the gym. Enjoy peace and quiet of empty weight room in middle of day.

Sweat. A lot.

Run Drive to drugstore. Still sweaty.

Home for a shower and lunch. Finally.

Lunch: 2:30 pm

No leftovers to heat up. Too hungry for a smoothie. A protein muffin would do. Wanted some greens. Pulled a STUFT Mama trick. Added spinach to my usual recipe. Couldn’t taste the spinach. Decide it looks like big green blob from sci-fi/horror film descending upon a city. Big fat crunchy carrot on the side.

Back to it! Return emails.

Add ribbon to banquet programs.

Jump back in car, pick up kids at bus stop.

Post office to mail MRI & xray CD to the best hip doc in the country. Hoping for a diagnosis.

More banquet details while boys are at baseball practice.

Cook dinner.

Dinner: 7 pm

Mung Beans in Coconut Curry with roasted brussels sprouts and broccoli.

Finally, the recipe demoed at Vegfest. Not what I was expecting, but still very good! Look for it later this week?

More banquet details to finish work on.

Collapse in bed.

  3. It seems like it’s crazy-time for everyone right now! I’m so impressed with your delicious eats with all the running around you did.

      It would have been easier/faster to go the “prepared food” route, but I knew I would regret it after, and it actually didn’t take much time to make what I did. If it is a priority, it can be done. That shall be my new motto.

      As excited I am for the event, I will be glad when it’s over! I have nothing but fun and relaxing scheduled for Friday and the rest of the weekend. I think I earned it! As for my car being clean, just don’t look in the back seat! Or at the outside of it! :)

      Oh yay, I’m so glad you like it! It is one of my all-time favorite breakfasts! It can be changed up so many different ways, but I think the blueberry banana combo is my favorite.

  10. Sweet niblets, I’m exhausted just reading about your day! I’ve been having hot water with lemon with my breakfast and at first, I wasn’t really a fan, but I can’t start my day without it now!

      I think supermom is a bit of a generous title, but thank you. I’m not feeling so super at the moment. Just exhausted. By 9pm tonight I will be D.O.N.E and then I shall sleep until next week. (Wishful thinking!)

  12. Wowsa what a busy day! No coffee in sight so I guess you’ve been running on adrenaline… and that delicious looking chocolate bar ;)
    We’re on Spring Break as from tomorrow so I’m looking forward to some chill out time with the family. Really hope things slow down for you too next week. You deserve a big fat rest! x

      Not just a busy day, but a busy week! Actually, busy several months! I don’t drink coffee, but I could have used an extra boost. The chocolate may have helped a bit!
      I am thrilled to say we are now on spring break as well, and it couldn’t have come at a better time. We don’t have much planned, and I’ve already fit in a lot of extra sleep. Just what I need! I hope you enjoy your break and get some time to relax as well!

      Thanks! Now that the weekend is here I made rest and relaxation a priority and it is just what the doctor ordered! Hope you have a great weekend too!
