What do you need after your exercise-seeking mom talks you into a hilly 4-mile bike ride in the middle of the afternoon on an 80 degree gorgeously sunshine-y day?
Something cold to help cool you off.
Something sweet to reward your comlaint-free hard work.
Something high in protein to balance out the sweet and refuel the muscles.
Something your mom just happened to whip together last night in five minutes flat.
Something we call Chocolate Moose Pops!
A friend of mine made us a vegan chocolate mousse around the holidays last year and I swear it was the best chocolate mousse I’ve ever tasted. Something made me think of that mousse yesterday, and I got the idea to freeze it to make this nice summertime treat. What a great idea it was!
In a blender, blend tofu, milk and vanilla. Heat chocolate chips in microwave for 1 minute, stir, then heat one more minute and stir again until smooth. Add melted chocolate to the tofu mixture and blend again until combined and smooth.
(To make mousse, at this point you would just chill in refrigerator and serve.) For frozen pops, transfer to popsicle molds
and freeze overnight or several hours until firm.

Cook Time: — 4+ hours of freezer time

Ingredients (Serves 4)
- 1 12oz. pkg. silken tofu
- 1 cup semi-sweet chocolate chips
- 1/4 cup coconut milk (or other non-dairy milk)
- 1 tsp vanilla
Instructions

When we got home from our bike ride I asked the boys if they wanted a Chocolate Mousse Pop and Cameron asked, “Why is it called a Chocolate Moose Pop? Do moose like to eat them too?”
I said, “If they just rode their bikes as far as we did on a hot day, I bet they would!”
So now we call them Chocolate “Moose” Pops. Easy to make. Real food ingredients. A nice dose of protein with the sugar to keep blood sugar levels stable. And they taste like a sinfully decadent treat.
The perfect ending to a perfect afternoon.
