It is Friday (hooray!) and you know what that means?
Besides it being the exciting Royal Wedding day? (Omg, was it not the most beautiful wedding?)
It’s Pizza Friday!
We have had this ball of gluten-free dough leftover from our last pizza night,
and I knew it wasn’t enough for us to make dinner out of for all four of us, so I decided to make a fruit pizza and have it for dessert, since today was such a special occasion. (If only I had one of those really cool hats the British women so proudly wear!)
This dough was made from a packaged mix (Bob’s Red Mill Gluten Free Pizza Crust), and while it wasn’t terrible, it also wasn’t that great. I probably won’t buy it again unless I am desperately hungry for homemade pizza.
I pressed it out flat onto a pizza pan, brushed it with a little melted butter and a light sprinkle of sugar, then baked it at 400* for about 15 minutes.
You can tell by that pan, we make a lot of pizza at our house!
For the “sauce” I mixed together an 8 oz. container of whipped cream cheese from Trader Joe’s, 1/2 tsp vanilla extract, 1 tsp orange zest and 1/4 cup powdered sugar.
Then the boys took over.

Smiles all around. At first Jace just wanted to watch, but then he changed his mind and got in on the action.
They then topped the pizza with strawberries, pears, mandarin oranges and banana slices.
They were very artistic and methodical about the whole process, and their final product was quite beautiful!
Their favorite part was getting to lick the “sauce” spoons and eat the leftover fruit slices.
The hardest part was waiting until after dinner to have a piece!
So while I made dinner, Jace and Obi played “Cops and Robbers”. Apparently that little black bandit stole a dinosaur skeleton from a museum and law enforcement was called to the scene to catch him and restore justice to the land.
Doesn’t he just look guilty?
The police officer was hot on his trail during a high speed chase full of nail biting twists and turns and harrowing spinouts.
Just when the deputy thought he had him cornered and was about to say “Gotchya!”,
with lightning-quick speed and agility the hairy hooligan turned the tables and caught him first!
Bound with his own handcuffs, the lawman had to call for reinforcements while the canine criminal escaped to terrorize yet another day.
Though feeling rather defeated, the officer was cheered up by the thought of a yummy dessert to look forward to because after all of that, he had worked up quite an appetite!
